The signature variety of Spain ripens to absolute perfection in the cool climate vineyards of the Adelaide Hills in South Australia and in Victoria where fruit was allowed to grow gradually to reach optimum ripeness. A deep dark purple with rich ripe berry softness and low acid and tannin results in an easy drinking wine that matches a wide range of foods. Oak aging in both French and American oak has allowed subtle integration of vanilla and spice characters, adding to the complexity.Palate
A fruit driven wine, light in structured due to the whole bunch fermentation and very, very approachable. The word moreish springs to mind. Plum fruit, tobacco and hints of rosemary dominate amongst a bright red spectrum.
A bubble gym like candy lift imparted from the whole bunch ferment dominates strawberry preserve, rose hip and plum nuances.
This wine is designed to be appreciated in its youth, however, will be captivating over the 5-10 years.
Tapas style dishes such as jamón or spicy meatballs or grilled or roast lamb.
